Natural Wines

Operation Dagger introduces an inspiring new menu as part of Singapore Cocktail Festival. Focusing on natural fermentation techniques, expect the award-winning bar's most elaborate menu to date. The menu includes a section on 'Natural Wines', featuring house ferments such as coconut, pear and fig wine, as well as tomato beer. "I want to get people thinking outside of their regular old fashioned, negroni or gin and tonic. The natural wine movement is huge back in my home of Australia and is gaining traction all around the world. This will be the cocktail equivalent of this movement, and definitely be a world first," says Luke Whearty.
